5 Steps Recipe to Prepare Special White Chocolate Fruit Cake

Recipe Name: White chocolate fruitcake

Ingredients:

For Shortbread

Two and a half sticks of butter (unsalted, softened)

Half cup almond flour

One and a half cup all-purpose flour

Half teaspoon of kosher salt

Half teaspoon of baking soda

Half cup of sugar

One egg

One tablespoon orange zest

Two teaspoons of vanilla extract

One tablespoon ginger

Two ounces of white chocolate

One cup of cranberries (dried)

¾ cup of coconut flakes

For Glaze

One tablespoon of virgin coconut oil

Eight ounces of white chocolate

Half teaspoon of kosher salt

Sprinkles and icing sugar

Directions:

  • Preheat your oven to 355 degrees F. Line a metal pan with parchment or baking paper. Grease the parchment with butter or oil.
  • Take a bowl. Add all-purpose flour, almond flour, baking powder, and salt to it. Whisk these ingredients. Now take a large bowl and add sugar and butter to it. Beat these two ingredients together using an electric mixer at medium-high speed. Keep beating until you get a light and fluffy mixture. Now reduce the speed of the mixer and add an egg to the bowl. Beat for one more minute on low speed. Make sure you scrape the mixture from the walls using a spatula. Now add orange zest, ginger, and vanilla extract. Beat for a few more minutes. Add the rest of the dry ingredients of Shortbread while the mixture is still running at low speed. Now add cranberries, chocolate, and coconut. Beat and then scrape down from the walls.
  • Pour this mixture into the pan. Make sure you damp your fingers with oil or butter. Press the dough evenly in the pan. Bake for 30-35 minutes. Now transfer it to the rack and wait for it to cool down.
  • It is time to prepare the glaze. Now take a microwave-safe bowl. Add chocolate, salt, and oil to it. Heat it for one minute. Set aside some of the glazes. Pour the rest of it on the cake. Make sure you spread it evenly. Chill it for 15 minutes.
  • Use a knife and slide it across the sides of the pan. Take out the cake. Now cut it into slices. Cut each slide into diamond-shaped bars. Chill the bars for at least an hour. Rewarm the glaze when you are about to serve the chocolate glaze. Drizzle the chocolate glaze on the top of the bars with the help of a spoon. Serve.
